Making simple things taste good: that’s what Le Chateau Simple in Sint-Gillis, Belgium, is about. Guests have a choice between two starters and two main courses, one of which is always vegetarian. The same dishes are on the menu for a maximum of two days, because every day Martijn searches for fresh ingredients, mostly seasonal and preferably local.
